kitchen management
Tkm offers the Level 3 Award in Kitchen Management from the BIIAB which is ideal for anyone responsible for managing a commercial kitchen, whether looking to progress to the next layer of management or a new business/catering operations owner.

food hygiene
All food handlers, regardless of the type of business they work in, are required by law to be trained in food hygiene to a level commensurate with their responsibilities. REHIS Elementary Food Hygiene provides a good general grounding of legal requirements and is ideal for general food handlers in a wide variety of businesses in the food industry. The REHIS Intermediate Food Hygiene course is suitable for managers and supervisors, including chefs.

haccp, CookSafe and hazard analysis
Food safety legislation makes it a legal requirement for all food businesses (except primary producers) to put in place, implement and maintain a permanent procedure or procedures based on food safety management (HACCP) principles. REHIS Introduction to HACCP and Hazards Analysis course is suitable for those in manufacturing and food retailing, and Tkm also offers REHIS HACCP for Caterers, which introduces the CookSafe system. This course is ideal for those needing to implement and document a food safety system within catering businesses of any size, with some of the time on the course spent developing systems specifically for customer's businesses. Booking for 6 or more delegates? In house training may be a more cost effective option to consider, which we would be more than happy to discuss. Organisations booking 4 or more delegates on any one course being run by Tkm will qualify for corporate discount.
