Tkm runs a range of courses required by businesses in the food, drink and hospitality sector, as well as courses in infection control. If you know which course you are looking for, course outlines and dates can be found either on the course calendar, or on the pages for drink service, food hygiene, haccp (which includes CookSafe) or infection control. drinks service
licensing
As from 1 September 2009, anyone that sells or serves alcohol in a licensed premises in Scotland requires a minimum of two hours of training. Courses available to staff include a basic training session, covering the legally required areas, and a number of BIIAB qualifications including the Scottish Certficate for Licensed Premises Staff, the Professional Barperson's Qualification (Award in Customer and Drinks Service), and Scottish Award in Responsible Alcohol Retailing.

wines and spirits
The Wine and Spirits Educational Trust Foundation (WSET) Certificate in Wines is offered by Tkm, which is an excellent course to introduce the fundamental principles of wine service. food
food hygiene
All food handlers, regardless of the type of business they work in, are required by law to be trained in food hygiene to a level commensurate with their responsibilities. The REHIS Elementary Food Hygiene provides a good general grounding of legal requirements and is ideal for general food handlers in a wide variety of businesses in the food industry. The REHIS Intermediate Food Hygiene course is suitable for managers and supervisors, including chefs, with the e-learning package providing flexibility for people to learn in their own time, at their own pace while being fully supported by a tutor.

haccp and CookSafe
Food safety legislation makes it a legal requirement for all food businesses (except primary producers) to put in place, implement and maintain a permanent procedure or procedures based on food safety management (HACCP) principles. The REHIS Introduction to HACCP and Hazards Analysis course is suitable for those in manufacturing and food retailing, and Tkm also offers REHIS HACCP for Caterers, which introduces the CookSafe system. This course is ideal for those needing to implement and document a food safety system within catering businesses of any size, with some of the time on the course spent developing systems specifically for customer's businesses.

New for 2010 - ideal for anyone with a general interest in food, health and nutrition and the way in which food affects our health, as well as those working in a wide range of catering premises.

infection control
Tkm offers the REHIS Elementary Control of Infection qualification and target groups include all non-NHS staff that provide a care service including care at home, care homes for children and young people, early education and childcare. The course is also aimed at individuals within these groups who have minimal contact, staff who have contact with service related equipment, and contracted/voluntary staff engaged in any of the categories above.

Staff should receive training, appropriate to their work activity, in infection control and prevention to ensure that they are adequately prepared to carry out their duties safely.
