The Award in Kitchen Management covers all aspects of managing a catering operation including people, administration, the kitchen environment and the wider market and the opportunities that this presents.
This course combines completion of a work-based workbook with two tutor-led sessions arranged to suit candidates.
Topics covered are:
- Managing people - including recruitment, performance management, motivation, successful team building, managing people and legislation
- Managing administration - including stock control, profit and loss, menu descriptors, managing change and problem solving
- Managing the kitchen environment - haccp, risk assessments, kitchen design and construction, energy efficiency and carbon footprints
- Managing your market - competition, marketing, SWOT analysis, target customer groups, marketing objectives, PEST analysis
assessment
- This course is assessed by a 1 hour exam consisting of 8 scenario based questions
qualification - Successful candidates will receive the BIIAB Level 3 Award in Kitchen Management
